Besides Gajeel's Fairy Tail spinoff, the title that immediately jumps out is "Regarding My Reincarnation as a Slime" which is the familiar "trapped in a video game" trope (see Log Horizon, Sword Art Online, ReZERO and more) but given the hilarious twist of the series protagonist being reincarnated as a Slime monster. That one definitely has anime adaptation written all over it.
